End of summer salad.

I had this wonderful salad at a friends house a few weeks back, and since then, have made it five times, twice was for 'just because' purposes.  It's easy, it's delicious and it's popular.  The three best things about food preparation.

You will need:

A big rectangle or square baking dish.  I just buy the disposable foil ones.

For the Salad:
Romaine lettuce
Pint of  cherry tomatoes *quartered
A bunch of chopped green onions
2 cups of thawed frozen peas
2 cups Shredded cheese of your preference.  I prefer sharp cheddar.
1 can of Bacos, it's super delicious with real bacon bits, but there's something about the smoky flavor the fake bacon that really compliments this salad.
1/2 to a 1 cup dressing.

Dressing.
3/4 cup mayo
1/4 half and half
1 tbs Apple cider vinegar
1 tsp sugar
Salt and pepper to taste
Whisk it all together until it's nice and blended, and let it sit in the fridge for about a half hour before using it.

You can alter the measurements for the dressing to your taste.  I like mine a little on the sweet side, so I go with less ACV, but this is your salad now, do with it what you will.

Layer your salad as follows.

♫Lettuce
♪Dressing *Drizzle it on, then leave some out for people to add if they want, but you don't want to drown your lettuce.
♫Tomatoes
♪Peas
♫Cheese
♪Green onions
♫Bacos
♪Love
♫Drool *Optional

This is the lazy version, complete with salad mix and no tomatoes.

Be prepared to make this..............A LOT!!!

PS.  It's also wonderful the next day, if there's any left.

  2. I had this at the wedding and loved it...didn't know you made it. I didn't know your mom made the "horses duvies" when I said I didn't like them, then added insult to injury when I said "but the pea salad is great". Thanx for the recipe. <3<3<3
